  • Halibut fillet for 4
  • 4 tbsps mayonnaise
  • 2 tbsps chopped parsley
  • 1/2 lemon
  • Sea salt to taste
  • Freshly ground black pepper
  • SALSA INGREDIENTS
  • 1 mango peeled with the flesh cut away from the seed, chopped
  • 2 to 3 peaches, peeled, seeded and chopped
  • 1/2 onion, finely chopped
  • 2 tbsps cilantro or parsley, finely chopped
  • 1 jalapeño, seeded and chopped
  • Salt and pepper to taste
Directions

Salsa (make in advance)

Mix all of the salsa ingredients in a bowl and chill.

Halibut

Pat halibut fillet dry.  Dust with sea salt and freshly ground black pepper. Squeeze the lemon over the top.

Spread 2 to 4 tablespoons of mayonnaise in a thin layer over the surface of the halibut.

Cook at 350° for 15 to 25 minutes, depending on the thickness of the filet. Top with salsa before serving. 

Serve with Swiss chard fritters and a bowl of steaming jasmine rice.
