This lovely soft pink beauty is more complex than you might think on first look.  She begins with aromas of pink grapefruit and cherries followed by more subtle notes of raspberry and rose petals.  The palate has lovely and lively  acidity balanced with the red fruit flavors infused with vanilla and peaches. The wine is vinified using wild yeast so there is a slightly unruly character to this beauty.

Tame this beauty with Honey Baked Ham; Duck Rillettes with Cherry Jam; Puff Pastry Tart with Herbed Tomatoes and Goat Cheese.

Wine Profile
Vineyard Notes
Domaine Modat’s 23 hectares of vines are located in the Roussillon commune of Cassagnes, in the prized Agly Valley above Perpignan near the Spanish border. Domaine Modat officially converted to organic agriculture in March 2011 and is in the process of certifying the vineyard to biodynamic production. Instead of using herbicides, the soil is worked and plowed to encourage the natural processes of breakdown and regeneration. The domaine’s respect for the environment is also reflected in the practice of the “minimal interference” farming method. The soil is mostly white, gray and red gneiss (granitic sand) over a base of fractured granitic rock, an ideal terroir for elegant wines. The well-drained soil gives the red wines fine, silky tannins, a light structure and great freshness. The terroir is also well-suited for the grape varieties used to make quality dry white and rosé wines such as this cuvée. The domaine has many old vines, with the Carignan vines being 110 years old.
Production Notes
Hand-picked, destemmed and carefully sorted. Maceration at low temperatures for three days, followed by temperature controlled fermentation on wild yeast with gentle punching down (18 - 20 days). Aged in stainless steel.
Winemaker Notes
Domaine Modat represents a return to winemaker Philippe Modat’s Catalan roots, where his grandfather once owned vineyards. While studying law in Bordeaux, Philippe developed a passion for wine that set him on a journey to founding his own domaine. In 2007, he and his father purchased land and vines in Cassagnes village in the heart of the Roussillon. In September 2008, they built a modern winery using eco-friendly organic materials equipped with thermo-regulated stainless steel tanks and new oak barrels. The estate is now run by Philippe’s two sons.
