Balance is the secret of this award-winning, organic white — a crisp blend of Clairette, Vermentino, and Bourboulenc. The fine, tonic nose expresses flowers and citrus. The mouth is a perfection of volume and freshness. The mineral finish is rich in character. An outstanding wine of native Mediterranean grape varieties!

The crispness of Le Grand Mayol brightens any seafood dish. Serve with grilled halibut with pineapple-red pepper salsa, shrimp salad with chutney mayonnaise, and seabass-cabbage spring rolls with ginger and chili dipping sauce.

Vineyard Notes
The vineyards are on cool lands at the top of the valley above St. Chinian. The vineyards are exposed to the north, an ideal environment for white wine. Clairette, Vermentino, and Bourboulenc all ripen late and create together perfect acidity, fruit flavors and floral scents.
Production Notes
Hand-harvested, organic grapes are lightly pressed and aged on the lees in steel tanks. 10% of the volume is placed in neutral oak barrels.
Winemaker Notes
Borie La Vitarèle was founded in 1990 by Jean-François and Cathy Izarn and comprises 18 hectares of vines in the AOP Saint-Chinian. The domaine has been organic and biodynamic since 1998, focusing on protecting the area's biodiversity. Under Jean-François and Cathy, Borie la Vitarèle became a place of pure creation, stripped of anything superfluous, an approach which is reflected in the wines. Since the accidental death of Jean François in April 2014, Cathy and her daughter Camille have managed the estate. Supported by a trusted team, Camille began vinifying the wines of Borie la Vitarèle in 2017.
