Heavenly complex aromas of black fruits, cherry, chocolate, and leather are the signatures of this single varietal wine from 90 year old, low yielding Carignan vines. The tannins are soft but sturdy and the balance with the luscious fruit of the old vine produces a memorable and lovable red wine  Time is the secret: old vines; waiting for the perfect moment of maturity to harvest; time in the cave with careful attention during fermentation; time in the barrel; and taking time with special friends to savor it all.

To be enjoyed with Prime Rib, Duck Breast in Port Cherry Sauce or Farro with Mushrooms.

Vineyard Notes
The Vignoble Puy domaine, in the midst of the ancient soils of the Minervois region, is made up of a mosaic of small organic vineyards on both sides of the famous Canal du Midi. Typical of the diversity of soils in the Languedoc, the Puy vineyards just a mile apart have on one side sandstone and red clay producing rich red wine grapes and on the other side silt and sediment from the Aude River producing light and flavorful white and rosé wines. Similarly the grape varieties of the domaine are quite diverse: Grenache noir, Grenache gris and Grenache blanc; Syrah; old Carignan; Mourvèdre; Marsanne; Vermentino; and Viognier. The vineyards face northwest and receive the drying effect of the local wind named The Tramontane, making organic agriculture easier than in other areas.
Production Notes
Traditional fermentation at low temperature; then aged in 1000 L French oak barrels.
Winemaker Notes
Emmanuel is the winemaker, a native son to the region who has been working in the Puy vineyards near the village of Roubia (pop. 812) since he was 9 years old. His helper in the vineyard, winemaking and all things marketing is his lovely Irish wife Leanne. Emmanuel's vines have been in his family since his grandfather left Spain in the 1930s at the age of 20. HIs grandfather started with 4 hectares in a small hamlet called “Les Matelles” and there in 1935 he planted Carignan vines. Emmanuel's father trained as a math and physics teacher, and after teaching for some years Emmanuel’s father returned to Roubia to take over his father's vines which were then passed on to Emmanuel, who has acquired more vines since. Emmanuel and Leanne now have 20 hectares (49 acres). Emmanuel trained at the university of wine in Cahors, where he received his BTSA in Viticulture Oenologie. At age 20 after finishing his studies he began working his own vineyards full time. He began making his own wines under the label “Château Puy”. Over the next 10 years the vineyards were all converted to certified organic vineyards. In 2020 after taking a break from their own label for several years attending to the needs of two small children, Emmanuel and Leanne launched a fully organic line which is called "Vignoble Puy".
