Joncs-cella is a powerful wine with a structure supported by a nice freshness of mineral and saline. It is expressive with aromas of candied orange, ripe pink grapefruit, beautiful notes of brioche and vanilla. Balanced and round, it is a demonstration of the alchemy between wine and wood. 

Pairs beautifully with seafood, such as scallops, lobster and grilled seabass.

Vineyard Notes
Created in 2013, Domaine de Bon Augure has nearly 9 hectares, planted on steep hillsides by a farmer in the village of Joncels in the early 1990s. 6 ha are covered by Chardonnay, 1 ha of Peite Manseng, 1 ha of Pinot Noir, and a few rows of Grenache Gris, Sauvignon Blanc, Chenin Blanc and Petite Arvine. Manual work is pushed to the extreme to remain in permanent contact with the plant in order to anticipate the appearance of diseases and parasites. Similarly, the nesting of useful predators, such as birds or bats, is encouraged. They also strongly believe in the importance of a living soil, hence the use of biodynamic principles supported by treatments based on copper, sulfur, clay and orange terpene. More broadly also agro-ecology: grassing, association of different crops, isolated trees, hedges but also animal presence such as horse-drawn ploughing when the steepness of the hillsides prevents any passage of motorized machinery.
Production Notes
Vinification: pneumatic pressing at low pressure, active maceration of lees followed by light settling; Aging: 12 months in new barrels; Production: 6000 bottles on average per year.
Winemaker Notes
Domaine de Bon Augure was born from a dream carried out by Cedric Guy and his wife Alice, a veterinarian by trade. Cedric, son and grandson of winegrowers, he grew up among the vines of the AOC Faugères, a land of great red wines, where he was co-owner of the Domaine Abbaye Sylva Plana. Father of three children, he thus divided his time between his family life and his two estates, but since 2018, he has devoted himself exclusively to the Bon Augure estate. His goal, to reveal the cold terroirs of the upper Orb valley, the future grands crus of the Languedoc.
