This blend of Grenache and Syrah draws you in with a dark and intense color.  Enticing aromas of the wild garrigue, cherry, eucalyptus and light smoke lead into black fruit on the palate.  Les Schistes has an elegant and velvety mouthfeel with lots of character and fine tannins. 

Serve with a hearty cassoulet, beef, game, poultry, cheeses, with friends in a friendly atmosphere.

Vineyard Notes
Very steep hillsides of laminated schistes, altitude of 300 to 350m, North-West and East exposure. There is no weeding of the vines and no pesticides are used. Both subsoiling and surface work take place and a small amount of compost is applied. These methods prevent erosion and yield clean, organic soil. The grapes are hand-harvested.
Winemaker Notes
Borie La Vitarele was founded in 1990 by Jean-François and Cathy Izarn and comprises 18 hectares of vines in the AOP Saint-Chinian. The domaine has been organic and biodynamic since 1998, focusing on protecting the area's biodiversity. Under Jean-François and Cathy, Borie la Vitarèle became a place of pure creation, stripped of anything superfluous, an approach which is reflected in the wines. Since the accidental death of Jean François in April 2014, Cathy and her daughter Camille have managed the estate. Supported by a trusted team, Camille began vinifying the wines of Borie la Vitarèle in 2017.

Ageability: Drink now or keep until 2029. Decant for one hour and serve at 62-64°.
