A robust white food wine with a nose of ripe pear with iodized and aniseed notes. A dense and saline mouth, full of freshness and minerality. Iodized scents emanating from the glass recall the sea winds and landscape around Banyuls. One of the great whites from the South of France, thoroughly impressive with its depth and length, and it ages well too, if you can wait.
Serve with roasted chicken with tarragon butter; grilled fish with herbed lemon butter; aged cheese (cow or sheep) or sautéed potatoes with parsley, peppers, aged sheep's cheese and fine herbs.
