Vineyard Notes
The terroir is alluvial marls from the Roussillon plain near Perpignan. Organic viticulture is practiced in all vineyards.
Production Notes
The destemmed grapes are placed directly into a 700-liter, terracotta, egg-shaped vessel. The ovoid shape encourages perpetual movement of the lees and stabilization of the fat. The vinification technique enhances the aromas of the grape variety while accentuating the minerality. Maceration lasts 4 weeks. The vessel is then emptied and the grapes pressed. Fermentation and aging occur in the same terracotta vessel.
Winemaker Notes
Loved by wine critic Jeb Dunnick, this domaine is run by the husband-and-wife team, Séverine and Philippe Bourrier. Séverine came to winemaking through raw passion, rather than family tradition and legacy. She studied oenology and worked in Bordeaux for a decade before becoming one of the finest female winemakers in the Roussillon. Philippe is the wise, earthy agronomist. Together, they restored an old château, revived vineyards and rechristened the estate L’Ou, Catalan for "egg," a reference to the oval-shaped valley surrounding the estate.

Ageability: Drink now or keep through 2025. Decant for one hour and serve slightly chilled at 65 degrees.
