Wine Profile
Vineyard Notes
The south-facing vineyard grows in arid conditions. The brown schiste soil produces grapes with full ripeness and maturity. The vines are at least 40 years old.
Production Notes
Grapes are manually harvested at peak ripeness then matured in full barrels for a minimum of five months. Maceration and fermentation is maintained at 64-64°F. The yeast is then "muted" or killed by adding wine spirit which leaves natural unfermented sugar in the wine. Bottling takes place in autumn after the next year’s harvest.
Winemaker Notes
Family-run Domaine Des Schistes was founded in the early days of the winemaking renaissance in the Languedoc-Roussillon. In 1989, the grandparents and parents of the current young winemaker, Mikael, broke away from the local cooperative winery to start their own adventure. Since then, Domaine Des Schistes has been creating delicious wines from grapes grown and harvested in their own vineyards. Regional tradition is honored as is openness to innovation and organic winemaking. The bold move to independence benefited wine lovers and helped usher in a new era of winemaking — from large production cooperatives to fine, small artisanal wines.
