A naturally sweet wine that spent 7 years in oak barrels! Before all of the sugar in the grape juice is converted by yeast to alcohol, the winemaker adds high alcohol spirit, like grappa. This kills the yeast and the sugar in the juice that has not been converted to alcohol remains in the wine. Hence, naturally sweet. The nose reveals notes of blood orange and candied chestnuts, a very complex and delicate bouquet. The palate is ample with notes of white chocolate and apricot.
Divine with room temperature Roquefort cheese, alone or on thin slices of baguette or crackers. If you love sweets it will be fabulous with Spiced Chiffon Pumpkin Pie. Or try it with Spiced Cake and Whipped Cream or a Hazelnut Chocolate Tart with Whipped Ginger-Marscapone Cream. Yuuuum!
